We cut and dry-age

Your beef is harvested at a USDA-inspected facility, then cut, dry-aged, individually wrapped, and frozen fresh at our Evergreen butcher shop. Allow 14–21 days.

Swing by the shop, or arrange delivery for a location-based fee.

Pay the balance

The rest is due at pickup or delivery — no surprises.

Cow share questions

What if I don't have much freezer space?

Start with an eighth or a quarter — they fit in most fridge-top or small standalone freezers. Come back for more once you know your rhythm.

Can I choose my own cuts?

We'll reach out after you reserve to talk through cut preferences — more steaks vs. more roasts, ground beef ratio, that kind of thing. On the whole share, we run it Butcher Knows Best to maximize the quality cuts.

How long does it take?

Plan on 14–21 days from reservation to pickup, depending on the size and our processing schedule.

How does payment work?

You pay a deposit to reserve your share online. The balance is due when you pick up or receive your order — no surprise charges.

Do you deliver?

Yes — local delivery is available for a fee based on your location. Pickup at the shop in Evergreen is always free. We don't ship cow shares — delivery and pickup only.

Where does the beef come from?

We raise our own cattle and source from Fitch Ranch in the Yampa River basin near Steamboat Springs, plus other local Colorado ranches. Fitch runs a USDA-inspected facility, and every animal is cut to order by our butchers in Evergreen.
