In the shop

Your local butcher and market

Welcome to The Lazy Butcher Shop, featuring premium Colorado beef. Enjoy fresh cuts, house-made sausages, dry-aged meats, curated seafood and shellfish, chef-made to-go meals, and market goods chosen for exceptional quality and flavor.

The offering changes with the case, the kitchen, and our specialty partners. Stop by for dinner ingredients, freezer staples, sauces, rubs, pickles, grilling supplies, dog treats, and the good pantry things we use ourselves.

The dry-aged program

Pick your steak, and we'll cook it for you

Every dry-aged cut in the case is aged in-house for 45 days — no shortcuts, no outsourcing. It's the same program and the same beef we serve a few miles away at Black Hat Cattle Co.

Pick your steak straight from the butcher case and we'll cook it for you next door in the restaurant kitchen, or take it home and cut it yourself — your call.
